If you are confused by the title, “naked” refers to the fact that this dessert doesn’t have a crust. It is basically apple pie filling. Ever since I made my raw & vegan Carrot Cakes with a creamy vanilla cashew frosting I was wondering what else I could be doing with a cashew base. The warmer temperatures screamed ice cream in my head. And I have been on the hunt for a healthier, guilt-free option that didn’t include bananas!
Inspired by my favorite healthy snack bar from the UK, Nakd’s “Cashew cookie”, I wanted to create a raw carrot cake version for Easter. Nakd bars are a raw, delicious snack and deliver energy in the form of only natural sugar. And with only a handful of ingredients, it was very easy to recreate my favorite snack bar. When I was in London, I saw hot cross buns in every bakery. So I did a little research and learned that they are a classic Easter treat in England, comparable to “Osterpinzen” in Austria. Apparently Hot Cross Buns are traditionally served on Good Friday. The cross on the sweet yeast buns represents the Cross of Christ. Intrigued, I tried my hands on this Easter treat but gave them my own little twist. I added finely grated carrots, orange zest and a orange-flavored icing.
