Inspired by my favorite healthy snack bar from the UK, Nakd’s “Cashew cookie”, I wanted to create a raw carrot cake version for Easter. Nakd bars are a raw, delicious snack and deliver energy in the form of only natural sugar. And with only a handful of ingredients, it was very easy to recreate my favorite snack bar. When I was in London, I saw hot cross buns in every bakery. So I did a little research and learned that they are a classic Easter treat in England, comparable to “Osterpinzen” in Austria. Apparently Hot Cross Buns are traditionally served on Good Friday. The cross on the sweet yeast buns represents the Cross of Christ. Intrigued, I tried my hands on this Easter treat but gave them my own little twist. I added finely grated carrots, orange zest and a orange-flavored icing. Hello 2015! I’m back and wanted to start the new year with a recipe. Even if you are not into new year’s resolutions, you may have over-indulged (like myself) over the holidays. January is the month, most of us are trying to start or get back into a healthy routine. Instead of fighting my sweet cravings I prefer to indulge in a healthy way. For example, with my raw & vegan Brownie Bars.
One afternoon, I was seriously craving something sweet and chocolatey, not like a fudgy brownie, but lighter and fluffier. Just a light and fluffy chocolate cake that was rich enough to satisfy my cravings. Oh and I didn’t have any eggs in the fridge. Well then a vegan cake it is! :)

I like researching how to make my own ‘food’. First of all it gives me a great deal of satisfaction knowing that I am not dependent on a supermarket, a brand or a company (yes I’m talking about you Nutella!). Most of the time it is healthier and does not contain any nasties. And in 99.9% of the cases it tastes much better than store bought!
