Whipped Nutella

Today I have something quite special for you to make: Indulge in homemade, decadent whipped Nutella! You can thank me later ;)

Once you have tried homemade Nutella you won’t go back to the store-bought kind. And it is so easy to make! Once you have your hazelnuts sorted out (=skinned), the food processor or blender will basically do the job for you. My whipped Nutella is also healthier. You won’t need any additional oil and there are no artificial flavors or other nasties added. You can alter the chocolate to your preference and could even try to make a dairy-free version, using dark chocolate. 

The texture is not as smooth as store-bought Nutella, a bit grainier. However, it is also fluffier and has an almost airy consistency to it = whipped! It also has a richer hazelnut taste than the store-bought kind.

Ingredients
  • 200g hazelnuts
  • 500 ml water
  • 150g brown sugar
  • pinch of salt
  • 250g semi-sweet or dark chocolate
  • 2 tbsp cacao powder
  • 1 tsp vanilla extract
Instructions
  1. Preheat the oven to 150°C. Place the hazelnuts on a baking tray lined with parchment paper. Roast the hazelnuts for 10 minutes, until they are golden brown. Let the hazelnuts cool for a bit. Once they are cool enough to handle, place the hazelnuts in a clean kitchen towel and pull the towel into a bundle. Rub the hazelnuts against each other and the skins will come off. There may be a few stubborn hazelnut skins, but that's okay, most of them will come off easily.
  2. Place the hazelnuts in a large pot, fill it up with 500 ml of water, and add the brown sugar and salt. Cook the nuts for 15 minutes, stirring occasionally.
  3. Pour the hazelnut mixture in a food processor or high performance blender and blend for about 10 minutes until the mixture has thickened and is smooth.
  4. Meanwhile, melt your chocolate over a double boiler.
  5. Once your hazelnut mixture is done, transfer it in a large bowl. Add the melted chocolate, cacao powder and vanilla extract and stir until everything is combined. Pour your homemade Nutella into mason jars and enjoy!
Notes
Store your homemade whipped Nutella in the fridge for up to 4 weeks.

Eat it on its own, dip strawberries or pineapple in it (my favorite), serve it on warm brioche or fill your croissant with it. The options are endless! If you are feeling exceptionally generous give it as a gift.
