Made with orange zest, juice and ground almonds, this easy, one bowl cake is deliciously moist and light. Perfect for breakfast or afternoon tea.

  • 125g butter (organic), at room temperature
  • 200g extra fine caster sugar
  • 5 eggs (organic)
  • zest & juice of an orange (organic)
  • 1 tsp vanilla extract
  • 250g ground almonds
  • 60g all-purpose flour
  • 2 tsp baking powder
  • a handful of flaked almonds
  • icing sugar for dusting
  1. Preheat oven to 150°C. Line the bottom of a round baking pan (22cm in diameter) with parchment paper and grease the sides.
  2. Place the butter, sugar, eggs, orange zest and juice, vanilla, ground almonds, flour and baking powder in a large mixing bowl. Mix the ingredients into a smooth batter. Pour the mixture in the prepared baking pan and sprinkle the flaked almonds on top. Bake for 45 minutes, until a toothpick inserted comes out clean. Let the cake cool completely in the pan. Dust with icing sugar before serving.
