Ever since I made my raw & vegan Carrot Cakes with a creamy vanilla cashew frosting I was wondering what else I could be doing with a cashew base. The warmer temperatures screamed ice cream in my head. And I have been on the hunt for a healthier, guilt-free option that didn’t include bananas!
Inspired by my favorite healthy snack bar from the UK, Nakd’s “Cashew cookie”, I wanted to create a raw carrot cake version for Easter. Nakd bars are a raw, delicious snack and deliver energy in the form of only natural sugar. And with only a handful of ingredients, it was very easy to recreate my favorite snack bar. Hello 2015! I’m back and wanted to start the new year with a recipe. Even if you are not into new year’s resolutions, you may have over-indulged (like myself) over the holidays. January is the month, most of us are trying to start or get back into a healthy routine. Instead of fighting my sweet cravings I prefer to indulge in a healthy way. For example, with my raw & vegan Brownie Bars.
Sorry for the lack of posts lately I don’t really know what my excuse is, I guess I have just been catching up with life in general… Nevertheless my to-do list does not seem to be getting shorter. Anyways.
The bikini season is almost upon us, even though the recent drop in temperatures (again!) might not seem like it. I’m still trying to motivate myself to get into shape and with all the rain it has been very hard these past weeks. What I have been doing is trying to eat healthier and not skipping breakfast which unfortunately I like to do a lot. I’m sure you have heard it a million times: Breakfast is the most important meal of the day! For me breakfast has to be quick, easy and delicious.
