If you are confused by the title, “naked” refers to the fact that this dessert doesn’t have a crust. It is basically apple pie filling. While it has the comforting flavors of apple pie, it is a healthier snack option. Leaving out the crust makes this recipe vegan and gluten-free. I also made it refined sugar-free. As spring as finally sprung and hopefully is here to stay, I’m officially opening the ice cream season on my blog!
Ever since I made my raw & vegan Carrot Cakes with a creamy vanilla cashew frosting I was wondering what else I could be doing with a cashew base. The warmer temperatures screamed ice cream in my head. And I have been on the hunt for a healthier, guilt-free option that didn’t include bananas!
