Vicki Sponge Cake

Victoria Sponge Cake

Today I will be sharing with you my version of a British classic, the Victoria Sponge Cake. It is a very simple cake, traditionally consisting of a fluffy sponge, filled with jam and whipped cream or buttercream. My problem: I don’t like whipped cream or buttercream. Whipped cream is something I’ve never been a fan of. In my opinion it doesn’t taste like much and I would never order whipped cream on top of ice cream or hot chocolate. And buttercream to me tastes as if you would take a bite of a stick of butter, drenched in lots of sugar. So you can see my dilemma, liking the idea of a British Victoria Sponge Cake but not the actual implementation.

Oatmeal Cake

I love oatmeal! I became a fan of it in London where they call it ‘porridge’ and cook the oats with milk to get a creamier texture. But sometimes (actually often) I like to eat cake for breakfast. I’m not a huge breakfast person, I don’t like to eat straight after I’ve woken up. I need my time to wake up in the morning before I’m in the mood to eat. I love brunch, though! I could easily eat pancakes, waffles and cinnamon rolls every day without getting tired of it!

DAY 24: My first gingerbread house!

MERRY CHRISTMAS!!!

I hope you are spending a lovely day with your families and friends!

I made my very first gingerbread house! I wanted to do one for so long and this year I finally made one. I would love to tell that it was super easy to make it, but that couldn’t be further from the truth. It took me hours, endless batches of icing and I was on the verge of throwing everything away when my house collapsed for the fifth time. But then my boyfriend saved the day as he realized that I built it wrong!  Please don’t ask how it possible to build a gingerbread house wrong, but I managed to do just that… All in all it was quite messy but I’m proud of my little house!

DAY 21: Mini Orange Cranberry Loaf cakes

Only three days until Christmas, can you believe it? And I haven’t wrapped a single present! I’m so behind with everything this year.

The combination of orange and cranberry is delicious for these loaf cakes. The oranges gives it that extra sweetness while the cranberries bring some tartness to it. The recipe is super easy to make and great if you need to whip something up very quickly for some spontaneous guests.

DAY 20: Eggnog Bundt Cake

Eggnog cake is a simple yet delicious dessert for the holiday season. I generally don’t like to make bundt cakes. There is always the fear that the cake won’t come out of the tin. But this time I made sure to grease every tiny corner of the tin and it came out very easily. The tedious greasing is definitely worth it, as the bundt shape makes the eggnog cake even more appealing.

DAY 19: Caramelized apple muffins with marzipan crumble

I received these very cute cupcake liners and toppers about a year ago as a gift and haven’t used them because I thought they were too cute for baking and then having to throw them away… Yes I’m weird like that! But one of my new years resolution is to actually use the things I have and not saving them anymore. So here there are, finally being used, in all their glory with a delicious caramelized apple batter inside. However, I must admit that I’ve only used four of the cupcake liners, I couldn’t quite get myself to using them all up… well, baby steps! ;)
